A weekday standard. Toss potatoes, green beans, onions and garlic with olive oil, salt and pepper. We make this stuff once every other week and I can never remember what temperature or how long to roast it. Somewhere between 400 and 450 for 20 to 40 minutes.
When Glenn and I make stuff like this, we always ask each other, “Does this count as dinner?” It has a vegetable and a starch, so we count it. Why throw meat in just for the protein? I’m sure we get enough of it throughout the day.
